I have another Beef Enchiladas recipe π I am a huge fan of enchiladas since you can pretty much fill the tortilla with whatever fillings you want — as long as there is plenty of cheese it will be yummy… Anytime cheese is involved the outcome is always yummilious ( my made up word just for the yumminess of cheese)
Enchiladas are suppose to be made with corn tortillas traditionally ( that is what I have been told anyways ) – but I think that flour tortillas work better since they can take more fillings – so this is how enchiladas eating works in my family – the dish is made and looks like the picture above — we usually cover it up and place it in the fridge – allow the flavors to marry overnight. Simple cut one of the tortillas off the casserole and heat in the microwave for about 1 minute – 90 seconds ( I like to serve my food SUPER hot so I tend to go for 2 minutes)
I love it since it will last lunch and dinner that night — easy on me π
