I have another Beef Enchiladas recipe 🙂 I am a huge fan of enchiladas since you can pretty much fill the tortilla with whatever fillings you want — as long as there is plenty of cheese it will be yummy… Anytime cheese is involved the outcome is always yummilious ( my made up word just for the yumminess of cheese)
Enchiladas are suppose to be made with corn tortillas traditionally ( that is what I have been told anyways ) – but I think that flour tortillas work better since they can take more fillings – so this is how enchiladas eating works in my family – the dish is made and looks like the picture above — we usually cover it up and place it in the fridge – allow the flavors to marry overnight. Simple cut one of the tortillas off the casserole and heat in the microwave for about 1 minute – 90 seconds ( I like to serve my food SUPER hot so I tend to go for 2 minutes)
I love it since it will last lunch and dinner that night — easy on me 🙂
I LOVE LOVE LOVE using bell peppers in my Easy Beef Enchiladas Recipe – as long as you do not include the seeds to the dish the flavor will be mellow and wonderful – seeds are where the heat is 🙂 Also red peppers are milder than green peppers
I also included a little bit of parmesan cheese ( I know that is a little weird) but it adds a great tang to the dish

- 1/2 Tsp of Chili Powder
- 1 Tsp of Cumin
- Pinch salt and pepper
- 8 Flour Tortilas
- 1 Red Bell Pepper ( Diced well)
- 1 Green Bell Pepper ( Diced Well)
- 1 Pound of ground beef
- 6 oz of Green Chilies ( Canned and Mild)
- 3 Pimentos ( Chopped)
- 1/3 cup of Parmesan Cheese
- 1 Cup of Queso – Crumbled
- 1.5 Cups of Green Enchiladas Sauce
- 1 Cups of Monterey Jack Cheese Shredded
- 1 Cup of Cheddar Cheese ( Not Pictured) Shredded
- Preheat oven to 375 lightly grease a 9×13 casserole dish
- In a large skillet – add pound of ground beef – once it is cooked and grease drained through add green pepper, red pepper, cumin, salt, pepper, green chiles, pimentos, and 1/2 cup of Enchiladas Sauce
- Once mix turn off the heat – add a 1/3 cup of mixture into each tortillas top with small bit of queso – into the middle and spread – fold over the sides and roll
- Place the seam end down into the casserole dish – once the tortillas have been add cover all of them with the rest of the sauce and Monterey jack, parmesan, and cheddar cheese
- Bake uncovered for 30 minutes
