My whole family loves clam chowder – my dad has been wanting to make this recipe for weeks now and I finally gave in — you know when your family really loves a dish you get afraid to make it because your creation might not live up to what they want

Today is Fried Rice

Do you ever make fried rice at home? When I was flipping through the recipe box looking for a recipe to try out I thought fried rice would be perfect. I have made fried rice many times – I am always shocked how many people are afraid to make fried rice at home. It is actually easy and pretty frugal
You can really use an veggies you want in the fridge. Marie’s recipe did not specify any particular vegetables so I ended up using carrots and celery since that is what I had on hand.
Sadly this recipe is not gluten free because of the soy sauce but if you use gluten free soy sauce you are good to go 🙂
This recipe makes about 3 – 4 cups of fried rice

- 2 Cups of Rice (uncooked)
- Veggie Oil
- 1/2 Cup of Chopped Carrots
- 1/2 Cup of Celery Chopped
- 2 eggs
- 1/3 Cup of Soy Sauce
- Salt and Pepper
- Cook rice according to instructions on the packaging
- In a large skillet – heat about 1/4 cup of oil
- Add carrots ( about 5 minutes before the rice is done cook) – cook for a couple minutes — then add in the celery
- Once the rice is done cooking add soy sauce to the skillet and a little more oil
- Add rice and mix well — this should be over low medium heat
- If the rice is dry add more oil
- Once everything is well coated – crack the 2 eggs into the skillet – mix for 2 minutes until the egg is cooked – season to taste with salt and pepper
- Enjoy
